Spring Gratitude Salad with Greens and Wild Rice

By 6

The last half of February is definitely more about spring and so much less about winter. I stuff my fridge with fresh greens, open the windows wide to let the fresh air wipe out every bad thought left from the winter darkness and take long walks in the park, concentrating to hear the tree buds making their way to the light. I cannot think about anything bad – my heart is filled with love and gratitude for enjoying a new spring and new beginnings in my life. Green and fresh are the way of translating this onto my kitchen table, and this salad is just as …

Avocado and Egg Sandwich with Super Seed Bread

Maybe the evening raindrops or the dense clouds from this morning try to hide them, but there are signs of spring everywhere. The extra hour of daylight, the sound of birds, the first fresh nettles cheering up the stalls at the farmers’ market, people sipping coffee or having lunch in the park, those special sun rays from Saturday morning and that smiling gypsy lady selling delicate snowdrops – everything adds just a little more to a good mood, whipping away the winter depression. I can’t wait for the flowers and tree buds to bloom, but until then, even though my sandwiches are made with fresh spring ingredients, I’m still …

Vegan Chocolate Doughnuts with Pink Berry Glaze

Last week I’ve been fighting a terrible flu which emptied me of my nutrients and energy, and kept me lying in bed for a few very long days. I haven’t caught a cold or flu since I changed my diet several years ago, and this one simply caught me by surprise. I couldn’t read or write, nor take photos, but I had enough time to think. It’s incredible how much illness changes your perspective, and the way other struggles turn out to be so unimportant when your health is the only thing that you actually need. I started to feel better on a very sunny day, when suddenly everything seemed to …

Whipped Chocolate Porridge with Quinoa Nut Crunch

Two years ago, after experiencing skin issues for a long time, I switched to a fiber-loaded diet to detoxify my digestive system long-term and help it eliminate toxins and old estrogen. I read in Kathryn Alexander’s book (which I think is a must have if you are trying to understand the basics of a healthy diet and why a poor one is most often the cause of our different health issues) that for a period of time I should stick to a breakfast based on oats or barley, be it granola, muesli, or porridge. At that time, I’d never had porridge before, and I was really curious about it. I made Bircher once and didn’t really enjoy it, then I discovered the classic which became one of my favorite breakfasts ever.

Monster Vegan Burger by Ellie Goulding and Jamie Oliver

Jamie’s Italy was my first cookbook, and this wonderfully talented guy won my heart and a special place on my kitchen shelf ever since. I still find inspiration in his work after all this time, and I’m always happy to watch every show or project he’s up to. Last year, in one of the episodes of his Friday Night Feast, he was challenged to create a burger to impress vegan guest star Ellie Goulding, and boy he sure did it! That green monster bathed in spicy vegan mayo haunted me and soon turned into a …

Easy Lunch Wrap with Sweet Potato, Hummus and Greens

By 16

Putting together a healthy wrap might be one of the simplest things you do in your kitchen. Don’t think fancy ingredients or superfoods – I always happen to have some extra roasted veggies from last night’s dinner, maybe some hummus, an avocado, or some fresh aromatic herbs. You don’t necessarily need a recipe, just let yourself play with the available ingredients, use spices, add eggs to enrich the nutritional profile, pack everything in a whole wheat or gluten-free wrap and you’re ready for a …!
