Homemade Chickpea Chips

We normally don’t associate the word “healthy” with chips. But this chickpea chips recipe is definitely an exception.

Made with chickpea flour, nutritional yeast, olive oil, and seasoning and baked instead of fried, this easy recipe will make you feel less guilty about snacking.

Besides being overall good for you, these chips with chickpea flour are also packed with protein, vegan, and gluten-free. They’re great on their own as a crispy snack or served with hummus, other dips, and on snack boards. 

For these homemade chickpea chips, you will need 8 simple ingredients. The amounts listed below yield about 4 servings or about 30 chips, all ready in 20 minutes. The chips are prepared in one bowl and baked on a baking sheet.

Once baked and cooled, you can enjoy them straight away and store any leftovers for up to two weeks.

Are Chickpea Chips Good for You?

Homemade chickpea chips are, without a doubt, good for you. 

Their main ingredients are chickpea flour, nutritional yeast, and olive oil. Chickpea flour is rich in protein and iron, which makes these chips a perfect addition to the vegan diet. Olive oil provides unsaturated fats and antioxidants linked to good cardiovascular health. And nutritional yeast adds a boost of B-complex vitamins, including vitamin B12 as well as protein.  

Chickpea flour, also called gram flour or besan, is also exceptionally rich in folate, thiamin, magnesium, and potassium — all nutrients that remain stable when baked. It’s also rich in fiber, which is why one serving of these chickpea chips will provide you with over 40% of the daily value for fiber.

And because these are baked rather than fried, the calorie count stays relatively low and you won’t end up consuming harmful compounds that sometimes form when food is fried in vegetable oil.  

All of the above benefits only apply to homemade chickpea chips. You may find store-bought versions, but these are often fried and mixed with less healthy ingredients like refined vegetable oil, rice flour, starch, and protein concentrate.

 

How to Make Chickpea Chips

To make these Chips with chickpea flour, you will first gather chickpea flour, olive oil, nutritional yeast, and the recommended seasoning. Then, you will combine these ingredients with water to make a non-sticky dough that you’ll roll into a thin layer between two parchment paper sheets.

Once you’ve rolled out the dough, you will cut it into triangles (or your preferred shape) and bake for up to 10 minutes or until the chips are golden. Let the chips cool and enjoy them as is or with your favorite dips.

 

With DIY chickpea chips, you don’t need to knead the dough as you would dough made with wheat flour. That’s because the latter requires long kneading to form gluten, which makes baked goods hold their shape. Dough from chickpea flour is gluten-free but naturally quite sticky and dense without needing to work it.

How to Serve Chickpea Chips

We recommend serving these DIY chickpea chips with hummus. While it might seem boring to serve two chickpea-based foods together, they actually complement each other perfectly. Hummus with its melt-in-your-mouth creaminess and these chips with their umami flavor and crispy goodness.

Other dips to serve these chickpea chips include: 

  • Pesto Rosso
  • Guacamole
  • Artichoke dip 
  • Queso 
  • Salsa
  • Roasted vegetable
  • Dill

But really, these chips go with almost anything creamy. Another way to serve them is on a vegan charcuterie board. 

It’s also important to note that these are best served the same day they are made. While they will stay fresh for a really long time, they may start to become less crispy after a while. Store them in an airtight container to keep them fresh for weeks.

What are chickpeas?

Chickpeas, also known as garbanzo beans, are a legume just like beans, peas, and lentils. They’re native to the Mediterranean region and are one of the oldest-grown legumes known. They’re a staple ingredient in many Indian, Middle East, and Mediterranean dishes.

How many carbs in these chips?

A serving (15 pieces) of these chickpea chips provides 33g total carbs, of which 23g are net carbs (digestible). The remaining 10g is fiber, which is an indigestible carbohydrate that supports gut and overall health.

Are chickpea chips keto?

In short, no. They are not keto because they’re made with chickpea flour, which is relatively high in carbohydrates. At 23g net carbs per serving, these chips provide more digestible carbs than is normally accepted in keto meals. 

Are chickpea chips gluten-free?

Store-bought and homemade chips are usually gluten-free. Chickpea flour is legume flour, so it does not contain any gluten. If buying packaged chickpea chips, read the label for wheat or gluten.

Ingredients

  • 1 cup chickpea flour
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp  cumin
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/4 cup water

Instructions

  • Preheat the oven to  320°F (160°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the chickpea flour, nutritional yeast, garlic powder, cumin, lemon zest, and salt. Add olive oil and use your fingertips to incorporate. Add water and knead into a firm, non-sticky dough. 
  • Place the dough between two parchment paper sheets and roll into a very thin layer. Remove the top sheet and cut the dough into triangles with a knife or a pizza cutter. Line the triangles on the prepared baking sheet into a single layer.
  • Bake for 8-10 minutes, until they start to brown. Check frequently, especially at the end of the baking time to make sure they don't burn.
  • Remove from the oven and let cool completely on the baking sheet. Serve right away or store in an airtight container.

    I think I could have done without water or have known to add just a tablespoon at a time.
    I used the entire 1/4 cup and it made a problem of having to add more than a 1/4 cup
    chickpea flour and never really got beyond sticky. So I floured the rolling out area with
    many tablespoons of flour. I baked them almost 15 minutes longer than stated in the recipe and
    that was probably due to the water amount I had added.
    They turned out okay. I will be very cautious about added water next time as I love the
    ingredients . I did add some dried rosemary from my garden before baking pressed into
    the dough before cutting the cracker shapes. Thanks for the recipe.
