A Blueberry Raw Cheesecake For A Special Valentine

Like every other beautiful thing in our lives, love is definitely worth celebrating more than just once a year. Valentine’s Day is not just a celebration of love, but it’s also one of hope in everything that is right and beautiful.

Over here, we have only celebrated Valentine’s Day for about 15 years, but we have the lovely tradition of Dragobete, a rural feast dating back thousands of years ago. It is celebrated on February 24th, and it’s about the beginning of spring, often referred to as “the day when birds are betrothed”.

From this date on, until the end of the first week of March, women in my country wear thin red-and-white ribbons as bracelets or brooches to celebrate the legend of Dragobete.

I’ve always loved legends and myths, and the ones from our countryside are really beautiful. Our folklore is an incredible combination of pagan and Christian beliefs, resulting a fascinating web of colorful traditions.

They all symbolize the victory of good over evil, just like Dragobete represents the victory of reviving spring over the harsh winter.

With spring in mind, I decided to pay a tribute to our beautiful tradition with this delicate raw cheesecake, pure and healthy, with the colors of tree blossoms. And you’ll definitely see me wearing the red-and-white ribbon until spring really takes root!

I can’t imagine anything easier than preparing a raw dessert – as always, the simplest things are the most spectacular. You’ll only need good-quality, organic, raw ingredients and a powerful food processor, the rest is just about playing with shapes, tastes and textures.

Raw desserts keep you away from refined sugar and they also enrich your diet with healthy oils, minerals, and vitamins.

The main ingredients for raw desserts are pretty much the same: dry dates, coconut oil, coconut milk, raw honey, fruits, all sort of seeds and nuts. Other ingredients are added for flavor and color: raw cacao powder, maca powder, turmeric, spirulina. The combinations are very versatile and you can recreate a lot of classic dessert recipes into more healthier versions.

This layered cake only contains six ingredients: dates, cashews, almonds, coconut milk, lemon, and blueberries. The taste is light and fresh and I simply cannot think of any color combination more suitable for a celebration of love and spring than this pale lilac and white.

Raw Vegan Blueberry Cheesecake

Light, fresh, and delicate, this raw cheesecake melts in your mouth, is packed with vitamins and minerals, and is ready in no time.

Ingredients

  • 2 cups raw cashews soaked overnight
  • 1 tbsp lemon juice only
  • 1/2 cup coconut milk full fat
  • 2 tbsp organic raw honey or raw agave nectar for the strict vegans
  • 1 cup blueberries fresh or frozen
  • 1 cup dry pitted dates soaked overnight
  • 1/2 cup raw almonds

Instructions

  • Line a round 6" pan with parchment paper and set aside.
  • Make the crust first - place the dry pitted dates and almonds in the food processor and pulse to obtain a sticky mixture.
  • Spread the mixture into the pan and press it to evenly arrange.
  • Drain the cashews and place them in the food processor along with the lemon juice, coconut milk and raw honey.
  • Process to obtain a smooth cream.
  • Pour the cashew mixture in the pan on top of the crust, spread evenly.
  • Place the blueberries (optional - add a teaspoon of honey or agave nectar) in the food processor and pulse to obtain a puree.
  • Top the cheesecake with the puree, cover and freeze for at least 3 hours.
  • For serving, let it stay at the room temperature for 15 mins until it can be cut easily.

      Hi Norma, it would be a totally different recipe but it’s not impossible! I would use dry pitted dates and dried coconut for the base, and coconut milk and banana for the “cheese”. It would have more like a fudge texture, but I’m sure it will turn out delicious.

      Hi Jodi, I used both as it needs the fat to get creamy, but if you want to cut the calories down you can just add the liquid. Let me know how it turned out!

      Hi Jamie, yes, cashews are soaked overnight. If you have a powerful blender there’s no need to soak dates. This is a very simple cake to make, so I’m sure yours will turn just fine!

    Does an individual pie slice hold it’s shape after defrosting? Or it is weak and falls over? I don’t have time to do a practice run through before I make this. Contemplating adding soaked irish moss to firm it up if your experience is that it falls over.

      Hi Becky, sorry for the confusion, I’m used with the metric system 🙂 I used a 6″ pan. About defrosting, I serve it partially defrosted and it’s fine, but when completely defrosted, I don’t think it would hold its shape.

        I just made this 3 days ago and its now in the freezer.
        its a round dish about 9″ maybe I want to say.
        how LONG do I need to Dethaw it for? AND where? Does it get dethawed in the fridge OR out on the counter at room temperature?
        ANd FOR HOW LONG does it get thawed? HOW SHOULD this be eaten? Slightly frozen or chilled?
        I really need your help because I made this for 9 guests for XMAS on Sunday so I cant screw this up!

    Just completed my first take on this lovely recipe on the eve of American Thanksgiving.
    Worked like a charm, very easy,,,Lends itself to variations…for example, I am going to add some lovely Papaya we have to further dress the top; hope that’s not heresy.
    I myself am far from being a vegetarian, but appreciate and regularly prepare vegetarian dishes and meals

    This sounds and looks so delicious! I’m going to be that annoying person who asks about substitutions — my husband is allergic to both cashews and coconut. Could the cashews be replaced with a different nut, and can almond milk or something like that be used instead of coconut by any chance?

      Tanya, you can replace cashews with a mix of any of these nuts: almonds, macadamia, pine nuts, walnuts, Brazil nuts. All these contain high amounts of fat, which is necessary for keeping the cake together. If you use these, it won’t be a problem to use almond milk instead of coconut. I hope this works!

    Hey Ana! Boy does this cake look fantastic, and the photography is just inspiring. Will there be a taste or texture difference if I replace half of the cashews with almonds? I’m also planning on subbing out the coconut milk for Greek yogurt. Thoughts? I can hardly wait to make this deliciousness!

      Almonds are a good replacement for cashews, but I would also recommend adding some Macadamia nuts or walnuts to obtain a creamier mixture. Greek yogurt sounds so refreshing, it will work great!

    I hate to be a naysayer, and I might have done something horribly wrong, though I think I did everything instructed, but unfortunately, this was a pretty major fail. I’ve made a number of raw deserts before so I thought this would be a good recipe, but about all the guests who I served it to could come up with was “it’s kind of weird.” And no one ate more than a bite or two. The top layer was so watery it melted before the middle layer got soft enough. The flavor combo in the middle part no one liked, and the crust was really hard and overly sweet. I also wish I’d used a vitamix because I think it just makes for a better texture. I don’t mean to be negative, but this had such positive reviews I was surprised it was such a strange texture and flavor combo and it was a rather sad way to end an otherwise great dinner party. It did look pretty stunning though…

        Thanks. You know what’s interesting? I put half in the refrigerator for three days and while the texture is still a little strange and the crust separates away from the middle, the flavor is dramatically improved. My partner was not a fan of it when we first tried it but ate a piece for breakfast today saying it was so much better. I think if I were to make it again I’d skip the freezer and make it a few days in advance. Anyway, just wanted you to know it did get better. 🙂

      Sure, you can use almonds, walnuts, hazelnuts, any of them will work just fine. Cashews give a creamier texture, but you’ll get good results with any of the above.

      I never used fresh dates, I really don’t know how they would do in this cheesecake. With the ingredients I used, it lasts about two weeks in the freezer. But of course, most time we eat it much quicker than this 🙂

    Hi! I made this Raw Blueberry cheesecake today, it looks good but I think it needs a little more sweetness. It was not sweet enough. Maybe if I will make it again I will add more sweeteners, especially if you add blueberry puree on top I think it is better to add 2 tablespoons instead of 2 teaspoons. Thanks!

      That’s really great, I’m so excited you made this recipe :)! I wouldn’t refreeze it, because the texture will change and probably make ice needles. I avoid freezing twice any kind of food, mostly because the nutritional content might deteriorate.

    We made this a few days ago. I have to say it tastes horrible. Followed everything to the dot. It looked amazing, however, I couldn’t stand the taste of it. Raw honey and coconut milk don’t go together. It is kind of rich, way too sweet, you wouldn’t ask for seconds. If you are looking for a cheesecake substitute, this is not it. Waste of time and money.

      Sorry it didn’t work out for you. This is the first time I hear of someone who can’t stand the taste of coconut milk and honey combined, most of the people think it’s pretty amazing, But we’re all different, and that’s a good thing 🙂

    How should I store the cheesecake once it’s done? I had a slice but I’m not sure whether to keep it in the freezer or fridge. How long does it last?

    I was wondering – do you think if it goes from frozen to thawed (but still cool) to frozen that it wuold spoil the cake/ texture?

        Thanks for the reply! I made the cheesecake, froze it and took it with me on the road for an hour and a bit before reaching my destination… then froze it again. Its all good!! Actually, I didn’t tell my stepdad about it not being a traditional cheesecake and he didn’t even know… he loved it and went for seconds! fiou… cause it was his birthday cake! he he
        (I changed the crust (included cocoa powder and added pecans) and the coulis (made it with black cherries)) The cheesecake content was taken from your recipe! thumbs up – thank you!

    I made this cheesecake tonight, but I’m sure there was something I did wrong. I have never used dates before, but I bought some to try in this recipe. I bought them from Amazon and they were the highest rated ones. I put them in a mason jar and soaked them overnight. I drained the water out of the jar, took the pits out and put them in the food processor. I think that may have been the first thing I did wrong. Was I supposed to squeeze the water out of them? They would not mix with my whole raw almonds. The food processor wasn’t even making a dent. Was I supposed to use whole or sliced almonds? I added a lot of sliced almonds to make it bulk up enough to form a crust, but it was still soggy. I also soaked my raw cashews in a mason jar overnight and then drained them. I blended them in my high-power blender with the coconut milk, but after 10 minutes, it was still gritty. I put it all together and froze it. I just had a piece and it was ok, but I just know I didn’t did it right! Can you please give me some tips? I don’t want to give up.

      It was actually the first step that went wrong, because the dates need to be well drained before processing them. And oh, I’m not sure if using a blender was a good idea, I always use a food processor with S blade to make raw crusts, they work so much better with seeds and nuts. I really hope this helps!

      Hi, I just finished making this recipe for the first time and I had the exact same problem you had! I had to start a new batch with dry dates that hasn’t been soaked and it blended really well. But as I didn’t have enough dates left, I added some of the previous soggy batch of dates and the second I start blending the problem comes back. So I ended up with really coarse almond crust base. I hope that doesn’t effect much. Next time I would suggest processing the almonds first until they are crumbly then add in the soaked dates to mix, or just don’t soak the dates at all. Now I have to think of what to do with that soggy batch of dates and almonds…

    Dear Ana,
    This cake looks fabulous and healthy ! I would like to make it for my daughter’s birthday next week. I’m a bit confused looking at the ingredients. How is it possible that so few liquid (only 1/2 cup of coconut milk en juice of 1 lemon) can be enough to make the (white) layer seen in the picure ? Is it correct or is there a typing mistake ? Other question: I thought of using some gelatine to hold it togheter when served as I need to serve it unfrosted.

    I made this today! Some observations:

    1. I am not a vegan, maybe a newb flexitarian, and new to making stuff with nuts and new to making treats in general, and wasn’t sure if I was supposed to soak them in salt water or boiling water or what, I just put tap water over them in a big bowl and let them sit overnight.
    2, When I got the dates after soaking them the outer layer came off on a lot of them. Do you include that? I did if they didn’t come off, but threw some away. Also it said to drain the cashews but didn’t say to drain the dates. Do I drain the dates or do you use that water? I didn’t use the date water.
    3. My ninja blender didn’t get the almonds all the way ground. So I think next time I might try to get the almonds ground before adding the dates.
    4. My blender got the cashew mix creamy but not as creamy as it could have been I think.
    5. I got to try some after about 4 hours in the freezer and it was really good! But it didn’t taste like cheesecake to me. I think I anticipated that happening and so I wasn’t disappointed, because it was still really tasty. But should it? Did I do something wrong? Maybe my lemon was too small so I didn’t have enough juice? Or is this just called cheesecake because of the similar consistency and vegans know it doesn’t actually taste like cheesecake because there’s no cheese.

    Anyywayyyy it was delicious and pretty easy and I’m happy I made it, and will make it again!

      Hey Marissa, wow, thank you so much for writing me so detailed! So here are my thoughts:
      1. Simple tap water works just fine, not boiled, not salted (filtered would be perfect to avoid the chemical stuff they use to keep it clean).
      2. I drain the water from the soaked pitted dates, and use them as they are, outer layer included.
      3. It is is good idea to ground the almonds first.
      4. Try using the food processor instead of the blender, it might work smoothly.
      5. The vegan cheesecake won’t taste like cheese, it’s just that it looks the same and have a quite similar consistency. If you will try your hand on other “veganised” desserts, you will get used with the new taste and the guilt-free feeling after eating more than planned! It’s great that you liked the first one and I am really happy you’ve chosen my recipe to start 🙂

      Refrigerating isn’t a good idea, because it will melt. If your plan isn’t to serve it all at once, you can use several smaller cheesecake pans. I hope this helps!

    Thanks for sharing this recipe, I just finished making this for the first time, can’t wait to try it!
    Only problem I had was the dates were so soggy (I soaked them over night) and the second I blend them in the food processor they just turn to mush, and the almonds just sticks on top of them where the blades couldn’t reach, if you know what I mean. Maybe I should’ve processed the almonds first until the right crumbliness then add in the dates, if that makes sense. But what I did instead was I started a new batch with dry dates that hasn’t been soaked and it blended really well. So may I ask what is the reason for soaking the dates and how long do you soak them for?

      The dates should turn into a puree that keeps the mixture together, so processing them to mush is just fine. If the blender doesn’t work well blending the almond with the date puree, it’s a good idea to process the almonds first. I soak the dates at least an hour, but usually overnight, and drain them well before adding to the processor. I hope this helps!

    Didn’t have a cake pan and had to improvise with a muffin tray! Worked well and I made 11 perfect little cheesecakes. I coated the tray with a little bit of coconut oil spray. Thanks for sharing!

    Thanks for a great and simple recipe! I made this for a Valentine’s Day dessert and it came out ok. I’m not sure what I did wrong. Although I drained the cashews, it almost seemed like there was too much water in the cheesecake layer as the best way I can describe it is “crystally”. I’ve made cashew cheesecakes before and they were hit and miss. One came out fantastic, and the other was less than desirable. This one was pretty good, but would have been great if it didn’t have that hiccup in the texture. Any suggestions? I would really love to have a solid technique for cashew cheesecake!

      I personally like the granita-like texture, but if you want to avoid it, use just a couple of teaspoons of fresh lemon juice instead of juicing the a whole one. Also, did you use full fat coconut milk? The raw, home-made version is always more watery, so maybe next time it would be a good idea to refrigerate the full fat milk and only use the solid part (without the liquid). I hope this helps!     I just made this recipe. The only change I made was I put the contents into muffin tins. I am vegan, my daughter is not – and she INHALED her vegan cheesecake cupcake and asked for another. I had to direct her towards the NON-vegan brownies I made for the rest of the family. Thank you for this recipe. Very delicious!

    I love this recipe. The photos are so beautiful. I’ve made this 3 times now and my husband and friends love it. Looks spectacular with berries on top. I only soak 1/4 of the dates over night rather than the whole cup (1st attempt, the base was slightly wet) It kept well in the fridge, although leftovers only lasted 1 day.
