Homemade Chickpea Chips

- 1 cup chickpea flour
- 2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1 tsp lemon zest
- 1/2 tsp salt
- 2 tbsp olive oil
- 1/4 cup water
Preheat the oven to 320°F (160°C) and line a baking sheet with parchment paper.
In a medium bowl, combine the chickpea flour, nutritional yeast, garlic powder, cumin, lemon zest, and salt. Add olive oil and use your fingertips to incorporate. Add water and knead into a firm, non-sticky dough.
Place the dough between two parchment paper sheets and roll into a very thin layer. Remove the top sheet and cut the dough into triangles with a knife or a pizza cutter. Line the triangles on the prepared baking sheet into a single layer.
Bake for 8-10 minutes, until they start to brown. Check frequently, especially at the end of the baking time to make sure they don't burn.
Remove from the oven and let cool completely on the baking sheet. Serve right away or store in an airtight container.
