Homemade Chickpea Chips

Ingredients

  • 1 cup chickpea flour
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp  cumin
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/4 cup water

Instructions

  • Preheat the oven to  320°F (160°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the chickpea flour, nutritional yeast, garlic powder, cumin, lemon zest, and salt. Add olive oil and use your fingertips to incorporate. Add water and knead into a firm, non-sticky dough. 
  • Place the dough between two parchment paper sheets and roll into a very thin layer. Remove the top sheet and cut the dough into triangles with a knife or a pizza cutter. Line the triangles on the prepared baking sheet into a single layer.
  • Bake for 8-10 minutes, until they start to brown. Check frequently, especially at the end of the baking time to make sure they don't burn.
  • Remove from the oven and let cool completely on the baking sheet. Serve right away or store in an airtight container.
