- 2 lbs purple potatoes
- 1 tsp salt
- 4 garlic cloves pressed
- 3 tbsp vegan butter or ghee
- 1/3 cup almond milk warm
- fresh thyme to garnish
Peel the purple potatoes, rinse and cut into 1/2 inch cubes.
Add into a large pot, add 1 tsp salt and cover with enough cold water (they should be totally submerged by about 1 inch).
Place over medium heat, bring to boil, them turn the heat to low and simmer uncovered for 20 minutes, until fork-tender. Turn off the heat.
Drain the water, return to potatoes to the pot and mash them with a potato masher or a large fork.
Add butter, almond milk, half a teaspoon salt and pressed garlic, and mix with an wooden spoon to incorporate.
Serve hot, garnished with fresh chopped herbs.
