- 2 cups sprouted mung beans
- 1/2 cup cooked red quinoa
- 1 pomegranate seeds only
- 1 celery stalk diced
- 1 small red onion finely diced
- 1/4 cup slightly toasted almonds crushed
- 1 avocado peeled, pitted and cut into cubes
- 2 bunches fresh parsley finely chopped
- Handful mint leaves
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp extra virgin olive oil
- 1/4 tsp cayenne pepper
