Ingredients

  • 2 cups sprouted mung beans
  • 1/2 cup cooked red quinoa
  • 1 pomegranate seeds only
  • 1 celery stalk diced
  • 1 small red onion finely diced
  • 1/4 cup slightly toasted almonds crushed
  • 1 avocado peeled, pitted and cut into cubes
  • 2 bunches fresh parsley finely chopped
  • Handful mint leaves
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp cayenne pepper
  • Pinch sea salt

Instructions

  • Add all the ingredients into a bowl and toss to combine, then serve.
