Sunomono Salad with Kelp for Thyroid Support

A quick treat for a healthy thyroid, this cucumber and seaweed (kelp) salad is loaded with iodine and selenium, the essentials for a balanced hormone production in thyroid.

Ingredients

  • 2 large cucumbers cut into thin slices
  • 1/4 cup dried seaweed I used kelp
  • 1/4 tsp sea salt
  • 1 tsp grated ginger
  • 2 tbsp rice vinegar
  • 1 tbsp low sodium soy sauce or tamari sauce
  • 1/2 tsp coconut sugar
  • 2 tsp toasted sesame seeds

Instructions

  • Rehydrate the seaweed according to the instructions on the package.
  • Add the cucumber slices into a bowl together with the salt, massage with your hands for a few seconds to help them leave their juices and let rest for 10 minutes.
  • Squeeze the cucumbers to remove their liquids and transfer into a clean bowl, together with the seaweed.
  • Add the soy sauce, rice vinegar, sugar and ginger into a small lidded jar, and shake to obtain a dressing.
  • Drizzle the sauce over the cucumbers, and toss to combine.
  • Garnish with sesame seeds and serve as it is, or as a side.
