Detox Salad for Estrogen Support
Ingredients
- 1 cucumber diced
- 1 large carrot diced
- 1/2 small head red cabbage diced
- 1 red bell pepper diced
- 1/2 cup pomegranate seeds
- 1 cup fresh broccoli sprouts
- 2 cups shelled edamame
- 2 stalks green onions diced
- 1 bunch fresh coriander finely chopped
- 1/2 avocado diced
For the Dressing
- 1 1 inch ginger knob peeled and grated
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1/2 tsp ground turmeric
- 1/4 tsp black pepper freshly ground
- 1 garlic clove grated
- 1 tsp toasted sesame oil
Instructions
- To a large bowl add all the salad ingredients and toss to combine.
- Add the dressing ingredients to a small jar with lid, and shake to combine.
- Drizzle the dressing over the salad, toss and serve.
